Four Holiday Meals and Mocktails Featuring Our Craft Sodas

The holidays will be here soon. That means affirming connections with family and friends, travel, parties, and lots and lots of food. If you're the one who prepares the food every year you face the dual challenges of making sure there is plenty for everyone and not repeating yourself. The second of those might actually be the tougher of the two challenges. So in this post, we're going to look at 4 ways you can use natural soda from Rocky Mountain Soda Co. to create unique holiday dishes and drinks everyone will love.

A Scrumptious Holiday Dish Made With Rocky Mountain Soda

Let’s start with a one-of-a-kind holiday dish that uses Rocky Mountain Soda and will have your guests clamoring for seconds.

Oven Roasted BBQ Chicken

This delectable barbequed chicken dish will be one of the culinary highlights of your holiday season. And best of all you won’t have to venture out onto the frozen deck to fire up the grill! The secret to this recipe’s success is all in the sauce, which contains a cup of our vegan Colorado Cola. Whether served with the rest of your Thanksgiving fare or as a standalone meal with some potato salad, baked beans, or fries on the side this Oven Roasted BBQ Chicken is sure to be a hit. (Note: you will need a programmable multi-cooker to execute the recipe.)

Ingredients (serves 4, scale up as needed)

  • 2/3 cup of your favorite ketchup
  • 1 tablespoon of chiles in adobo sauce (can be purchased online)
  • 1/2 teaspoon of paprika
  • 1/2 teaspoon of ground cumin
  • 1 cup of Rocky Mountain Colorado Cola
  • 2 1/2 teaspoons of salt
  • 1 tablespoon of apple cider vinegar
  • 1 teaspoon of garlic powder
  • 1/4 teaspoon of black pepper
  • 1 (3 - 4 lb.) whole chicken, cut into large pieces
  • Cooking spray
  • 1/2 cup of water
  • Directions

    In a small saucepan over medium-high heat combine the ketchup, chiles in adobo sauce, paprika, cumin, 1 teaspoon of salt, and half of the Colorado Cola. Stir often for approximately 10 minutes until the sauce is slightly thickened. Reduce heat and stir in the vinegar, then remove from heat.

    In a small bowl combine the garlic powder, black pepper, and the remaining salt. Mix thoroughly. Add this seasoning to your chicken pieces as evenly as possible. Then line a baking sheet with aluminum foil, coat the foil with the cooking spray, and set it aside.

    Pour the water and the other 1/2 cup of Colorado Cola into the programmable multi-cooker. Then add the seasoned chicken to the cooker and pour half of your barbeque sauce mix (from the small frying pan) over the chicken. Do NOT stir the chicken in the pot.

    At this point preheat your oven to broil.

    Back to the cooker. Cover the cooker and lock the lid in place. Set the steam release handle to the sealing position. Then set the manual/pressure cook setting to high for 10 minutes. Note that the chicken won’t be ready in 10 minutes because it will take 10 or 15 minutes for the cooker to reach high pressure. So the chicken will be ready 10 minutes from when it reaches high pressure.

    When the cooking has stopped, vent all of the steam. Only then remove the lid, and then carefully remove the pieces of chicken and place them on the baking sheet you set aside earlier. Put the remainder of the barbeque sauce from the small frying pan over the chicken pieces on the baking sheet and then place it in the oven for approximately 5 minutes until the skin is slightly crispy. Remove and enjoy!

    Cranberry sauce is a staple of holiday dinners from coast to coast so creating a delicious, refreshing cranberry-based holiday mocktail is a natural. This particular cranberry mocktail has a special ingredient that helps bring it to life while leaving a slightly savory aftertaste: Rocky Mountain Golden Ginger Beer. Let’s take a look at what you’ll need to produce the Spiced Cranberry Fizz.

    Ingredients

  • 2 oz of cranberry juice
  • A pinch of ground cinnamon
  • A pinch of ground clove
  • A 2-inch wide strip of orange zest
  • 1/2 oz of maple syrup
  • A dash of lemon juice
  • 2 oz of Rocky Mountain Golden Ginger Beer
  • A slice of orange and some fresh cranberries to garnish
  • Keep in mind that if you want your Cranberry Fizz to have an earthier flavor profile substitute walnut bitters for the lemon juice.

    Directions

  • Muddle the cranberry juice, cinnamon, orange zest, clove, lemon juice, and maple syrup together in a cocktail shaker
  • Add ice and shake well
  • Strain the mixture into a rocks-filled glass (a Collins glass or close approximation)
  • Add the Rocky Mountain Golden Ginger Beer over the top
  • Garnish and serve
  • The Mock Mule

    The Moscow Mule has slowly but surely become one of the world’s most popular cocktails, with countless local variations on the Mule theme found in every corner of the world these days. So it’s no big surprise that you can use kosher and gluten-free Rocky Mountain Golden Ginger Beer AND our Telluride Tonic Water to create a Mock Mule that will rock your holidays.

    Ingredients

  • 1/2 cup of our Telluride Tonic Water
  • 1/4 cup of our Golden Ginger Beer
  • 3 tbsp of fresh lime juice
  • Lime wedge
  • Crushed ice
  • Directions

  • Fill a copper mug 3/4 of the way with crushed ice
  • Add the above ingredients
  • Garnish with the lime wedge
  • Blackberry Spritzer Mocktail

    The last of our holiday mocktails is the Blackberry Spritzer made with Rocky Mountain Breckenridge Blackberry pop and our Telluride Tonic Water. Here’s how you make it.

    Ingredients

  • 2 fresh blackberries
  • 1 1/2 oz of orange juice
  • 1 oz of lemon juice
  • 1 oz of Cinnamon Syrup
  • Breckenridge Blackberry soda
  • Telluride Tonic Water
  • Directions

  • Muddle the blackberries in a cocktail shaker using a wooden spoon
  • Add the orange juice, lemon juice and cinnamon syrup
  • Shake well
  • Top with equal parts Breckenridge Blackberry soda and Telluride Tonic Water
